1/2 c. unsalted butter

Chicken Wonton soup
4 c. chicken broth
2 c. pre-shredded carrots
8 dumplings
1 c. thinly shredded precooked chicken
1 T. soy sauce

1/2 c. evaporated milk
2/3 c. sugar

cook and stir over med heat until mixture thickens and starts to boil - about 10 min.
remove from heat and stir in

2-1/2 c. flour
3/4 c. cocoa

1 c. margarine

40 rolo caramels
top with chopped pecans and 1 t. sugar
make as per usual with cookies
wrap 1 t. dough around each rolo, make sure completely covered
press one side of ball in topping mixture and place nut side up on cookie sheet
bake at 350 degrees for 10 min.

Combine in large bowl:

1 c sour milk (remove 2 T. milk and replace with vinegar, let stand for 5 min.)
1 c. black coffee

Add to dry ingredients and beat for 2 min with mixer.
Pour inot greased and floured 10" tube pan
bake at 350 degrees for 50-60 min until toothpick comes out clean
cool then remove from pan

2. spread tomato sauce in pan, add a layer of no-cook lasagna noodles
3. In a bowl mix 16 oz spinach, salt and pepper, 32 oz of ricotta - spread half on top of noodles and cover with another layer of pasta
4. spread the other half of the spinach mixture and then sauce and shredded mozarella
5. add another layer of noodles, top with remaining sauce and shredded cheese
Bake on middle rack for 40-50 min.

4 c. cream corn (2 cans)
1-1/2 c. cornmeal

1 onion, chopped

combine and place in greased casserole
bake 40 min at 350 degrees
Bean and Vegetable Burritos
1 t. vegetable oil
2 med onions chopped
3 cloves garlic
1 sweet pepper chopped
1 c. finely diced zucchini
1 lg carrot in thin strips
2 t. chili powder
1 t. each oregano and cumin
1 can refrieds combined with 1-1/2 c. salsa

Curried Sweet Potatoe and Lentil Stew
2 T. oil
1 lg onion chopped
1 T. curry powder

14 oz vegetable broth
3/4 c. dry lentils
simmer 20 min

1/2 c. apple juice
3 c. sweet potatoes cubed
1 c. frozen green beans
simmer 15-20 min.
Tamale Pie
2 T. vegetable oil
1 lg onion diced
2 T. chili powder
2 cloves of garlic
1 can tomatoes (14 oz)
1 15 oz can of black beans
1 lb ground beef
1/2 t. salt
1 c. cheese
2 T. fresh cilantro
3/4 c. cornmeal
3/4 c. flour
3 T. sugar, 1/2 t. salt, 3/4 t. baking powder, 1/4 t. baking soda
3/4 c. buttermilk, 1 egg, 3 T. melted butter - combine and stir into dry ingredients 'til just combined
1. Heat oven to 450 degrees
2. heat oil over med heat, add onion and chili powder, saute for 5 min then add garlic for 30 sec
3. Add tomatoes, beans, beef, and salt - simmer 8-10 min.
4. Add cheese and cilantro

1-1/2 c. macaroni uncooked
2 cans mushroom soup
2 c. milk
1 can fri chik and gravy
1 onion diced and microwaved 1-2 min with a bit of butter

combine and bake in 2-1/2 qt casserole uncovered 1.5 hours at 350 degrees
Chicken Curry with Noodles
3 lb chicken pieces (2 cans veggie gluten)
5 cloves garlic
3 med onions chopped
1 T. finely chopped fresh ginger

1-2 t. chili powder or hot pepper flakes to taste

1 can coconut milk
2 T. cornstarch to thicken

Apple Kuchen
Bottom:
Yellow cake mix
1/2 c. margarine
1/2 c. coconut
mix together until crumbly, press into a pan and bake for 10 min at 350 degrees
Filling:
8 c. apples sliced
sugar to taste
2 t. cinnamon
**microwave until softened 2-5 min.
Drizzle with 1 c. sour cream/1 egg combined and bake another 10 min.
Baked Caramel Corn
1 c. butter
2 c. brown sugar
1/2 c. corn syrup
1 t. salt
1/2 t. vanilla
1/2 t. baking soda
6 qts popped corn
Melt butter, stir in sugar, corn syrup and salt. Bring to a low boil stirring constantly. Boil without stirring for 4-5 min. Remove from heat, stir in soda and vanilla. Pour over popped corn and mix well.
Put into 2 shallow pans. Stir q15 min while baking.
Bake at 250 degrees for 3/4-1 hr. Don't bake it any longer!!
Mom's Chocolate Peppermint Torte
Cake:
2 c. sugar
1-3/4 c. glour
3/4 c. cocoa
1-1/2 t. baking powder
1 t. salt
2 eggs
1 c. milk
1/2 c. vegetable oil
2 t. vanilla
1 c. boiling water
Combine dry ingredients, then add rest of ingredients EXCEPT boiling water and beat at medium speed for 2 min. Stir in boiling water.
Bake in 3 9" cake pans well greased and floured for 20-25 min.
Cool for 10 min and turn out of pans
Filling:
1-1/2 c. cold whipping cream
1/2 c. powdered sugar
2/3 c. finely crushed candy cane or 1/2 t. mint extract
3/4 t. vanilla
3 drops red food color
Mix cream and sugar until stiff, gently fold in remaining ingredients until well blended
Cocoa Glaze
2 T. butter
2 T. Hershey's Cocoa
2 T. water
1 c. powdered sugar
1/2 t. vanilla
melt butter over low heat in small saucepan, add cocoa and water, stir constantly until slightly thickened, remove from heat and gradually add sugar and vanilla beating with wire whisk until smooth and of spreading consistency, add additional water 1/2 t. water at a time prn
Assembly:
spread peppermint filling between laters, reserving 1/2 c. for garnish
Spread cocoa glaze over top of torte.
Refrigerate
Mandy's Creamy Raspberry Dessert
Crust:
3 T. sugar
1/4 c. margarine melted
Filling:
10 oz pkg frozen raspberries - thawed
1/4 c. cold water
1 envelope unflavoured gelatin
1 pkg cream cheese softened
1/2 c. sugar
1 c. whipped cream
Press crust into a springform pan - bake 10 min at 350 degrees
Drain raspberries, reserving juice
Combine juice, water and gelatin in a saucepan, cook over low 'til gelatin dissolves, cool for 10 min.
Beat cream cheese and sugar together, add gelatin mixture and berries and blend
Chill until partially set and then fold in whipped cream
Spoon onto crust
Chill for 6 hours or overnight
Just before serving garnish with whipped cream and fresh berries.
Jolene's Lavender Heart Cookies
1/2 c. unsalted butter, diced @ room temperature
1/4 c. caster (superfine) sugar
1-1/2 c. all purpose flour
2 T. fresh lavender or chopped dried culinary lavender
2 T. caster sugar for sprinkling
Cream together butter and sugar 'til fluffy, Stir in flour and lavender and bring misture together in a soft ball. Cover with Saran and chill for 15 min. Preheat oven to 400 degrees. Rool out dough and cut out shapes. Bake 10 min. or until golden.
Charlene's pudding icing
Combine 1 pkg of lemon pudding and 1 c. milk
Let it set and the blend 1/2 c. whipped cream into it

1/3 c. margarine
1 T. hot water
1 egg
1 t. vanilla
1 c. flour
1 c. brown sugar
1 t. baking powder
1/8 t. soda
1/2 t. salt
3/4 c. peeled and grated zucchini

Melt margarine with hot water. Add brown sugar and beat well. Cool. Add eggs, vanilla and beat. Mix cry ingredients and add to mixture. Stir in zucchini and nuts. Add chips.
Bake 30 min at 350 degrees

Glaze:
1/2 c. water

Low fat orange cranberry scones
2 c. flour
1/2 c. sugar
1 t. baking powder
1/2 t. salt
1/4 t. baking powder
combine above and cut in 1/4 c. butter
1 t. vanilla
6 T. orange juice
1/2 t. orange zest
beat and add to above until *just moist*
add 1/2 - 3/4 c. cranberries
pat into 8" round, score and brush with egg white and 1/2 t. water beaten together
bake at 400 degress for 25 min
Refrigerator Bran Muffins
2 c. Nabisco 100% bran
2 c. boiling water
combine the above
1 c. shortening
1.5 c. sugar
4 eggs
1 qt buttermilk
cream the butter and sugar together, then add eggs and buttermilk, then add to the bran mixture
5 c. flour
5 t. soda
1 t. salt
4 c. Kellogg's All Bran
sift together dry ingredients and add to above mixture, lastly add the All Bran
optional: 1 c. raisins, and some cinnamon
Store in fridge, covered, for weeks
Bake at 400 degrees for 15 min as needed

Mom's Food Processor Pizza Crust
2 cups flour
1 tsp salt
1 tsp instant yeast
1 T. oil
1 c. water
put it all together in the food processor and pulse until a ball forms
let it rise once and then go for it!
Artichoke Dip
13 oz can of artichokes, chopped
1 c. mayonnaise
1 4 oz can diced chilis
1/2 c. cheddar cheese
Optional: 5 cloves (roasted) garlic, substitute parmesan for cheddar, leave out chilies
bake 20-25 min until lightly browned
Mom's Sugar Cookies
2 c. butter, softened
2 c. sugar

1 T. grated lemon peel
2 t. vanilla
6 c. flour

bake at 350 degrees for 10-15 min 'til lightly browned
